Funky anaerobic roasts can be fun, but as I approached year 5 of being a coffee nerd, I found myself wanting a simple bean that tasted consistent for my daily 2-3 Americanos.
As a light roast, this bean will be closer to floral & present more as a tea as a pourover: while clear, it is simple & transparent. The notes of this bean shine via Espresso: Americanos with the clarity of a pourover, and lattes pleasantly balancing to milk.
I first tried these beans over a year ago, & because of life, they sat on my counter for over 3 months before I got to try them. To say I was pleasantly surprised with the Americano I brewed that morning would be an understatement - the only beans that typically hold that well are Geishas.
The fundamental tenet of food is that quality of ingredients are over half the battle - & that is what you will find in this bag of Ethiopian beans from Yïrgach'äffe: Heirloom Arabica beans grown at high altitudes, roasted with simplicity by an Ethiopian family in Texas.
I do not roast these beans, I am simply sharing a source of beans I personally love & use on a daily basis.
